Pork Chops In Gravy
Hello friends. It’s time for an easy pork and gravy recipe. It only takes approximately 30 minutes. This dish is cooked in just one pan!

What You Need for the Chops
- 4 Boneless pork chops
- 1 ½ tsp. Italian herbs (a mix of thyme, basil and oregano) *
- Salt and Pepper (approximately 1 tsp. pepper and ½ tsp. salt (or more if you prefer)
- 1 tsp. Fresh thyme for garnish (optional)
- 3 Tbsp. Canola Oil
- Deep frying pan with lid *
- Paper lunch bag or paper towel lined plate
- Aluminum foil
- Serving plate
- Meat thermometer
What You Need for the Gravy
- 4 Tbsp. unsalted butter or margarine
- 4 Tbsp. Flour (sifted)
- 1 ½ Cups chicken broth
- Pinch of Italian herbs
- Salt and pepper to taste
- 2 Tbsp. milk or cream (I use lactose free milk or sour cream) *
- Whisk
- Sieve or sifter
- Small bowl
- Serving plate

BEFORE YOU START
Line plate with brown paper bag or paper towels, sieve flour into a bowl
LET’S MAKE IT!
Add canola oil to frying pan and heat at medium temperature, sprinkle pork chops with herb seasoning on both sides and add to heated oil. Sear (about 3-5 minutes) on each side. When golden brown. Remove from oil and place on prepared paper lined plate, cover with aluminum foil and set aside (note-they are not finished cooking yet) Add sifted flour to pan and whisk for about 2 minutes to incorporate.
Add broth to the frying pan a little bit at a time and whisk continuously until creamy, add herbs, salt and pepper and continue whisking (about 3-5 minutes).
Add the pork chops back into the pan, flip both sides to cover with gravy mixture. Cover with lid and reduce heat to medium low and cook for about 15-20 minutes then flip and cook for 5 minutes more or until meat thermometer reach 145-160 for the pork internal temperature. Remove pork chops and place on serving plate and remove frying pan from heat. Add milk or cream to the pan and whisk to combine then pour over pork chops. Garnish with fresh herbs (optional)
*Katies Tidbits nut milk is fine for this recipe, you can use fresh Italian herbs instead of dried, swap milk or cream for plain yogurt, if you don’t have a lid for your frying pan you can use aluminum foil.
