You are going to start seeing a whole lot of holiday themed foods here over the next few weeks. Meatless Monday may just turn into recipe Monday for a little while. I hope you like this pumpkin bread recipe. You can make one loaf for now and one loaf for Thanksgiving.
What You Need
3 Cups sugar
1 Cup vegetable oil
4 Eggs
2/3 Cup water
1 Can pumpkin (15 oz
2 tsp Ground ginger
1 tsp Ground allspice
1 ½ tsp Ground cinnamon
1 tsp Ground cloves
3 1/2 Cups flour
2 tsp Baking soda
1 tsp salt
1/2 tsp baking powder
Non stick cooking spray
Electric Mixer
2- 9 x 5 loaf pans
Large mixing bowl
Medium mixing bowl
Before You Start: Preheat oven to 350 ° Spray inside loaf pans with non stick cooking spray.
Lets Make It! Combine sugar, oil and eggs in the mixing bowl and beat for about 2-3 minutes on medium high until smooth. Add water and beat until well blended. Stir in pumpkin, ginger, allspice cinnamon, and clove. In a medium bowl, combine flour, baking soda, salt, and baking powder. Add dry ingredients to pumpkin mixture and blend on medium until all ingredients are mixed. Pour equal amounts of the batter into each loaf pan. Bake for 55- 75 minutes or until toothpick comes out clean. Ovens vary so please start checking at 55 minutes.
*Katies Tid Bits-Try adding 1 cup chopped walnuts to this recipe, or ¾ cup raisins for a little something extra

I wonder if I could make this with gluten-free flour. It sounds divine!!! I wish I could smell it right now! I cannot get over the snow from the previous post. I will probably wear short sleeves and capris today!
