Cinco De Mayo Guacamole Recipe-
No Cinco de Mayo (a celebration of Mexican heritage and pride) meal is complete without some delicious guacamole. Our oldest granddaughter called it Grandma’s wok -a- mole’ when she was younger. No matter how you say it. It’s a must have! I hope you’ll enjoy theses yummy recipes.
What You Need
4 ripe avocados ( haas are the best)
¼ cup fresh lemon juice (or lime)
¼ sour cream
1/2 cup red onion (chopped)
1 garlic clove (minced)2 serrano chiles or jalepeno chiles (finely chopped)
¼ cup fresh cilantro (finely chopped)
¼ tsp olive oil (Extra-virgin)
Coarse salt and freshly ground black pepper to taste
Potato masher ( or large fork)
Mixing bowl
Plastic wrap
Before you Start: Cut the avocado in half and scoop out the inside using a spoon or run your thumb along the edge of the avocado skin and pop out the avocado. Set the seed aside ( don’t throw out)
Lets Make It! Place avocado into mixing bowl. Mash the avocados with a potato masher. It’ll be a little bit chunky. Add the lemon, sour cream, red onion, garlic, chilies, olive oil and salt and pepper. Mix well to combine. To keep guacamole from turning brown, place the avocado seed into the center of the guacamole and place the plastic wrap over the bowl so it touches the surface of the guacamole and the avocado seed . Refrigerate for about an hour.

Food processor
Before you start: Cut the avocado in half and scoop out the inside using a spoon or run your thumb along the edge of the avocado skin and pop out the avocado. Cut into chunks
Lets Make It! Place avocado into food processor and add lemon, sour cream and salsa, Pulse until consistency you prefer is achieved. Chunky or smooth. Ready to eat!

But what’s the reasoning for the seed and plastic wrap? Is this for looks or does it accomplish something?
I missed Cinco de Mayo so I made tacos tonight instead. We added mashed avocado with cilantro to them too, yummy.

I love avocados plain or as guacamole! Two of my sons make a mean guacamole, both different, but each great. I have no clue to their recipes, but I enjoy them, both AND the fact that THEY are the ones making them and all I have to do is dip and savor.

In San Antonio, Cinco de Mayo is HUGE!! Party time! We go through guacamole like a woman goes through shoes!! Most summer meals are accompanied with gucamole…you just can’t have enough of a good receipe!!!
