Meatless Monday, Mango Sorbet
It’s still so hot here. Is it hot where you are? Today’s meatless Monday should help cool you off a bit and it’s truly refreshing. Oh, and eazy peazy!
What You Need:
1 Banana
1 Mango, frozen (large) or 2 cups frozen ( from a bag)
½ tsp. vanilla extract
1 tsp. cinnamon ( this is optional)
Blender (or food processor)
Before You Start : You read that right, the mango needs to be frozen. Or you can use prepared frozen mango slices from your local markets freezer section.
Lets Make It: Peel and chop your banana into small pieces and place it into the blender. Add the vanilla, frozen mango, and cinnamon (optional) and blend. I use the pulse setting. You don’t want to puree it. Blend until it’s well incorporated. Stir with a spoon and scoop out. If you over blend, no problem. Just pour it into a freezer safe container (I use a bowl) pop it into the freezer and wait a few minutes then scoop.
Cool, refreshing and delish.
Serves 2 ( maybe)

I love this idea to make a mango sorbet! I have frozen mango in the freezer (OK, duh…where else would frozen mango be? lol) and I was going to use it in a smoothie, but I’m definitely going to have to try this sorbet idea!

This looks yummy Katherine. I will definitely try it tomorrow when I get to the grocery to pick up some bananas. Funny that I have mangoes but no bananas. It’s beautiful today here in Roanoke but forecast is for hot later on. I actually like the hot weather. It will be hard to say goodbye to it soon and gaze out at snow.

It is cool here with temps in the night of 50’s & today will only be in the upper 60’s…finally!! Almost feels Fall-like!! But it still looks wonderfully tempting!!
