Plum and Berry Crumble
Happy Monday wishes and happy July too sweet bloggy friends. It’s going to be a busy week for me and a lot of you too. But I have plenty to share and I’m starting the week off with this easy to make and extra yummy crumble. I know the temperatures are hot for a lot of us. But add some ice cream and you will be glad you spent a few minutes in the kitchen. I still had plenty of raspberries left from last week and this is a great recipe for combining fruit flavors. Raspberries,plums and orange, yes they taste delish all together. Happy Canada Days to my sweet Canadian bloggy friends!
4 Large plums (chopped)
1 Cup raspberries
3/4 Cup flour (plus 1 Tbsp.)
1 1/4 Cup brown sugar
1 Cup sugar substitute I use Splenda (or use Sugar) Divided
2 Cups oats (not instant)
1 Tbsp. butter (unsalted , cold and sliced)
2 Tbsp. orange zest
1 Tbsp. orange juice
Cast iron skillet
2 Mixing bowls
Baking sheet
Parchment paper
Before You Start: Preheat oven to 425 ° line a baking sheet with parchment paper
Lets Make It! In mixing bowl combine 3/4 cup flour, brown sugar, 1/2 cup sugar substitute ( or sugar), oats, and butter and mix until crumbly. In a mixing bowl combine, raspberries and plums. Mix to combine. Pour into the skillet and top with 1/2 cup sugar substitute (or sugar), 1 tbsp. flour, orange zest and orange juice. Spread the brown sugar and oats crumble mix over the top of the fruit. Place the skillet on the parchment lined baking sheet. Bake for 30- 40 min. or until the fruit filling is bubbling, and crust is browned.
Serves 6-8
*Katies Tid Bits, you can make this in a glass baking dish or pie pan if you do not have a skillet. Try different berries like blue berries and blackberries too.

That’s a dish that works best in a cast iron skillet. We cook in hot weather here in Florida! lol Hugs!

I don’t recall ever having a dish with plums in it, although my grandmother had plum trees and was an excellent cook/baker. How odd, now that you made me think about it. Although I don’t trust my memory for squat.

I’m making something similar for tonight’s dinner with blueberries and nectarines. It seems it has been very warm in Houston and I’m glad to be away for a while though no place is perfect. We’ve been having lots of rain in Maine.
