Salmon On Crust

Once in a while we buy a large piece of salmon and have a bit leftover. While my Mother was visiting I created this Salmon on Crust ( aka salmon pizza) giggle. You know I like to play around with my recipe names. We all had a laugh.  🙂  I even tried it in Italian, ” Salmone in Crosta “.  The nice thing about this recipe as that you can use smoked salmon for it as well. You do not need to make this using dairy-free sour cream, regular sour cream is just fine if you are not on a restricted diet.

What You Need

1 Can (11 oz.) refrigerated pizza dough (I use Pillsbury refrigerator pizza dough)
1 Tbsp. Olive oil ( or canola)
1/2 Lb. Salmon (cooked or smoked)
I Tbsp. dry dill
1/2 tsp. Dry garlic
1 Red bell pepper (seeded and julienne)
1/2 tsp. Dry chopped chives
1/2 Cup black olives (chopped)
1-2 Green onions (chopped tops and bottoms)
1-2 Small zucchini (peeled and thinly sliced)
3/4 Cup sour cream substitute (I use dairy free)
14 x 17 Baking sheet (or similar size)
Bowl
Whisk

Before you Start -Preheat oven to 400°
Lets Make It! follow instructions for dough, using olive oil to coat the baking sheet and spread the dough out to cover the baking sheet. Bake for 5 minutes and remove from oven and set aside. In a bowl whisk together dairy free sour cream( or sour cream), dill and garlic. Spread sour cream mixture evenly over the pizza dough; add zucchini, red pepper, olives, salmon and onions and spread out evenly. Bake on top rack of oven for 10-15 minutes until crust is golden.
Serves 4
Katies Tid Bits* try adding your favorite sun dried tomatoes and other veggies to this recipe too. Substitute cream cheese for the sour cream for a completely different taste!

    I’m laughing because I couldn’t figure out what salmon on crust was!! But you caught my attention. Looks yummy. We have salmon a lot and I never thought to make something out of it. I love the olives – yum!!
