Mini Cranberry Loaves

Fresh cranberries always make me think of the holidays, did you ever string a garland of cranberries  for your Christmas tree? I am sharing my newest recipe for  mini cranberry loaves today. This recipe, like all of my recipes, was so much fun to create. I  was asked by the fine people at Frigidaire to create a recipe using their Frigidaire Professional® Convection Toaster Oven. What You Need

3 Cups flour
2 1/2 Cup Splenda sugar substitute ( or granulated sugar)
1/4 Cup Splenda brown sugar substitute (or brown sugar)
1/2 tsp. Vanilla extract
2 Tbsp. Canola oil
3/4 Cup lactose free margarine ( or butter) softened to room temperature
1 Tbsp. Ground cinnamon (dry)
6 Eggs (room temperature) divided -4 whole eggs, 2 egg whites
1 Cup lactose free milk ,I use Lactaid ( or milk)
2 tsp Baking powder
¼ tsp Salt (optional)
Nonstick cooking spray ( I use Pam canola oil)
2 Large mixing bowls
2 small mixing bowls
1 small bowl ( for whisking eggs)
1 1/2 Cups fresh cranberries (slice large cranberries in half)
6 Mini loaf pans ( 3.5 x 6)
Shallow plate or pie pan
Electric mixer
Sifter
Whisk
Wire cooling rack

This is a migraine safe recipe, a lactose free recipe and a low sugar recipe. Substitutions are provided in the ingredients list. If you are not on a migraine safe diet please see Katie’s tid bits below.
Before you start- I created this recipe for baking in a Frigidaire Professional® Convection Toaster Oven

Using a Frigidaire Professional® Convection Toaster Oven with it’s Rapid Cooking Infrared Technology – offers quicker preheating and cooking time. The Powerplus® Convection process provides easy browning and faster cooking time.

Lets Make It! In one mixing bowl sift together flour, cinnamon, baking powder and salt. Remove 3 heaping tablespoons of dry mixture and place in shallow bowl (or pie plate) and set aside. In another bowl, using an electric mixer, beat margarine (butter), canola oil and sugars on medium high speed until creamy (about 10 minutes). Add vanilla and whole eggs and continue beating until well incorporated (about 3 more minutes).Reduce speed to medium and slowly add dry ingredients and milk a little at a time ( alternating each time) to the bowl of wet ingredients. Repeat until well combined. In a small bowl whisk egg whites until frothy, fold egg whites into batter.Add cranberries to shallow bowl of dry ingredients and toss lightly to coat. This will help to keep the cranberries from sinking to the bottom (remember my cherry cake, same thing). Fold in coated cranberries.

Pour batter into loaf pans and place on center rack of the Frigidaire Professional® Convection Toaster Oven, set time and temperature according to the manuals directions, to  325° for 30-35 minutes (or until wooden toothpick inserted in the center comes out clean).

The convection system will come on automatically. the Pro-Select® LCD Display is easy to read and provides a bell sound when the oven has completed it’s cooking cycle.

Once baked, remove from the oven and let cool in loaf pans for 5 minutes remove and let cool on wire rack for about 30 minutes. Garnish with additional cranberries, sugar or powdered sugar if your diet allows.
*Katie Tid Bits if you are not on a migraine safe diet, increase vanilla to 3 teaspoons. If baking in a conventional oven increase temperature to 350° . Time and toothpick test remains the same.
Serves 6-12 ( one mini loaf each or half each)

Frigidaire Professional® Convection Toaster Oven Review

I have never owned a convection oven, so when the fine people at Frigidaire requested a review of their Frigidaire Professional® Convection Toaster Oven I was intrigued. Part of the review request included my creation of a recipe to be made specifically for the toaster oven.  The toaster oven is a lot smaller than I expected, so it takes up little valuable counter space. But, it is large enough inside to toast 6 pieces of toast (see my notes below regarding the toast). You can fit a frozen pizza in there too.

It is an attractive stainless steel appliance so it will fit in well with most other appliances in your kitchen. It has a very easy to follow user guide and has features that are also very appealing. The rapid cooking infrared technology offers quicker preheating and cooking and the convection function provides even cooking in less time. The power plus preheat function heats very quickly, so no waiting around for the oven to reach the proper temperature.

It has a an easy to read Pro-Select® LCD Display, eight preset cooking options like, Bake, Broil, Toast, Reheat etc. you just move the, The interior of the oven is easy to clean and it even has a crumb tray to catch toast bits, etc. All in all I found the Frigidaire Professional® Convection Toaster Oven to be a useful appliance and it will continue to be used for a variety of things over the years.  Christmas breakfast for 9 will be a lot easier too.
Regarding the toast, this was the only function I didn’t care for. It is a “toaster oven”. If you like your toast light or even medium it works fine. But for those who prefer their toast to be a bit darker you must watch the toast very closely. The time allotted for the toast exceeds the time needed and you will end up with burned toast. Not much of a complaint really. Because, I think you should keep an eye on anything you have cooking.
One other thing worth mentioning, the toaster oven surface gets hot, do not leave anything on the top of the oven (or leaning against it) while you are cooking.
I do not use half stars in my rating system so I will give the Frigidaire Professional® Convection Toaster Oven Review a four star rating.
