Herb with Bacon Mushrooms-
We love mushrooms and I make them often and in a variety of ways. Sauteed mushrooms are terrific spooned over meat and chicken recipes. I also like to serve a butter herb mushroom with a nice piece of fish and a bit of rice. They are also a yummy side dish for any meal and a great accompaniment for breakfast and brunch too. I hope you will give my herb and bacon mushrooms a try, maybe they will make it to your table soon. This is such and easy recipe to prepare, and it has bacon! This herb with bacon mushrooms dish is also delicious prepared with Portobello mushrooms.
This is a migraine safe recipe ( please know your trigger foods before creating any of my recipes)if you are not on a migraine safe diet please see Katies Tid Bits below.
What You Need
3-4 Strips bacon (minced) I use nitrate free
2 Tbsp. Canola oil
1 Lb. Fresh mushrooms sliced (cleaned and stems trimmed)
3 Cloves garlic (crushed)
1/2 tsp. Crushed rosemary (dry)
1/2 tsp. Thyme (dry)
1 tsp. White pepper (ground)
1/4 Cup fresh parsley (finely chopped)
Nonstick skillet
Before You Start- Brush your mushrooms clean with a tea towel, cheese cloth or paper towel. Do not clean in water.
Lets Make It! Add bacon and oil to skillet and cook over medium heat until bacon is about half cooked through ( about 5-8 minutes). Add mushrooms and remaining ingredients and saute’ all together stirring regularly to insure bacon is well cooked and mushrooms have softened.
Serves 2-4
*Katies Tid Bits – If you are not on a migraine safe diet use bacon with nitrates if you prefer. Also heavy smoked bacon is an option for those not on a migraine safe diet. The type of bacon you use hickory, maple, etc. changes the taste a bit. Try different types of bacon to find your favorite. This recipe is also delicious spooned over fresh cooked pasta.

I’m a big fan of sauteed mushrooms and yet I don’t think I’ve ever done them with bacon. I will sure be doing that next time! I don’t have migraines but I don’t eat nitrates for health reasons, so I’m good with that one.
