Cinnamon Apple Maple Muffins
Last month I was the fortunate winner of a giveaway at Lisa’s blog, Blogghetti. I won a copy of the cookbook ” A Good Food Day”, written by Marco Canora with Tammy Walker . It is filled with wonderful healthy recipes, beautifully photographed and each page urges you to get into the kitchen and make something delicious and healthy. Being on a restricted diet makes it very difficult to enjoy a recipe as it is originally written, even healthy recipes. Today’s recipe for Cinnamon Apple Maple Muffins was inspired by Marco’s recipe for Apple Walnut Spice Muffins.

Marco’s recipe ingredients list (with the things I can’t have highlighted) – unsalted butter,rye flour,oat flour, ground flaxseed,cinnamon,ginger,nutmeg,cloves,baking soda,sea salt,gala apples,egg, greek yogurt,extra virgin olive oil,walnuts,blackstrap molasses
What You Need
1 Cup flour
1 Cup quick cook oatmeal ( not instant)
1 ½ Tbsp. cinnamon
1 ½ tsp Ginger
1 tsp. Nutmeg
1 tsp. Baking soda
¾ Cup Splenda
1 Tbsp. Maple syrup ( no sugar added)
3 Large Granny Smith apples
1 Egg
¼ Cup applesauce ( no sugar added)
¼ Cup canola oil
Nonstick cooking spray
¼ Cup margarine (lactose free)
Two mixing bowls (large)
Grater (large hole)
Sifter
Electric Mixer
Food processor or spice grinder
Muffin tin (12 muffin cups)
Cupcake liners (optional)
Cooling rack
Before You Start– Preheat oven to 350°. Line your muffin tin with paper liners and spray with nonstick cooking spray. Set aside. If you are not using paper liners, spray inside of muffin tin cups. Pulse oats in a food processor, spice grinder or blender until powdered and set aside.
Lets Make It! In a bowl combine margarine and Splenda, using electric mixer blend on medium speed until well combined, add egg, oil, applesauce and maple syrup. Continue blending until smooth.
In a large bowl sift together the flour, powdered oats, baking soda, cinnamon, ginger and nutmeg. Slowly add to wet ingredients and beat on medium low speed until well combined.
Core and peel one apple, grate (large hole of grater) directly into ingredients, repeat with remaining apples. Using a spoon mix well to combine. Spoon equal amount into prepared muffin tin and place on center rack. Cook for 25-35 minutes (until a toothpick inserted in the center of the muffin comes out clean) Let cool in muffin tin for 5 minutes then transfer to wire cooling rack.

Few things smell better than baking apples and cinnamon. Muffins also freeze well, so they are great to have on hand for those days when it all “falls apart!”
