6 Simple Salmon Recipes
We have been enjoying the last of the Salmon hubby caught at the end of the summer. It stays full of flavor wrapped tightly in foil or freezer paper. Keep in the freezer for up to 6 months. I’m sharing 6 simple Salmon recipes with you today. These are recipes you and your family will enjoy made with salmon fresh from the water or fresh from the seafood counter at your local market.
The truth is we eat this first recipe most of all. Simple and easy to make it keeps the delicate meat of the salmon together and the simple sides are compliments to the seasoned flavor.
Simple Salmon Recipe
What you Need
4-6 oz. Fresh salmon fillet or steak (per person)
My Everything Seasoning
Fresh rosemary
Lactose free butter (or regular butter if you aren’t on a restricted diet)
Lemon slices (optional)
Aluminum foil
Baking sheet
Before you start
Preheat oven to 400°F, Tear a piece of foil approximately 12 -16 inches x 12 -16 inches for each piece of salmon fillet or steak
Let’s Make It!
Place salmon onto the center of foil, sprinkle lightly with everything seasoning, top with a slice of butter (add a slice of lemon if desired) and a small sprig of fresh rosemary.*
Draw the sides of the foil up to meet each other and pinch or roll together, creating a sealed pouch, leaving plenty of space between the top of the foil and the prepared salmon inside. Please don’t wrap the salmon tightly. Repeat for each piece of salmon.
Place
Katie’s Tid Bits -refrigerate any leftover salmon and serve with your favorite pesto and crackers, or enjoy it in a pasta salad recipe, or with white mac and cheese. Made using mozzarella, white cheddar or smoked gouda, they are all great! Replace the lobster with salmon using my royal mac and cheese recipe.
Simple Salmon Pasta Salad
What You Need
8-10 oz. Your favorite pasta noodles (cooked)
6 oz. Leftover salmon, (cut into bite size pieces)
1 Cup fresh peas (or frozen and thawed)
Fresh basil leaves or green salad leaves ( like arugula)
1 Clove garlic, finely minced
½ -1 Cup of your favorite Italian dressing
Salt & black pepper (to taste)
Large salad bowl
Cling wrap
Colander
Small bowl
Whisk
Before You Start
Prepare pasta according to directions, drain, rinse in cold water and pour into large bowl. Cover with cling wrap and refrigerate for approximately 30 minutes.
Let’s Make It!
In a small bowl whisk together salt, pepper, Italian dressing
Katie’s Tid Bits* try adding a bit of spice with a shake of red pepper flakes before serving. Freshly grated parmesan is a wonderful compliment to this recipe too, sprinkle as much as you desire on top of this yummy salad.
