Italian Style Roast Beef
I’m calling this a fusion recipe,a mixture of Italian and English. My Italian Style Roast Beef closely resembles my shepherds pie recipe ( wink). It is a quick and easy way to satisfy a hungry appetite or to use up leftovers. I made these in individual crocks for an easy to serve recipe too.
What You Need
1 pkg. Herb Rubbed Italian Style Beef Roast Au Jus (15 Oz) or see Katies Tid Bits below*
2 Cup Peas and carrots (thawed or leftover) divided
1 Cup corn (thawed or leftover) divided
2 Cups Mashed potatoes (fresh made or instant)divided
2 Corningware 20 oz. oven safe crocks ( or two 2.5 cup oven safe containers)
Salt and Pepper
2 Tbsp. Butter (or margarine) divided
Baking sheet
Before you start- Preheat oven to 425°, cut the roast beef into bite size pieces.
Lets Make It! Spoon half of the roast beef and gravy into each crock. Add 1 cup of peas and carrots to each, add ½ cup of corn to each. Top vegetables with 1 tablespoon of butter (or margarine) add a pinch of salt and a grind or two of pepper. Top each with half of the mashed potatoes on each. Using the back of a spoon smooth the potatoes out evenly. Place both crocks onto baking sheet and bake for 20-30 minutes or until heated through and potatoes are browned.
Serves 2
*Katie’s Tid Bits, If you do not have access to the Hormel Italian Roast Beef, this will work well with leftover roast beef and gravy too. Add ½ tsp of your favorite Italian seasoning to your leftover roast beef and gravy then follow the remaining directions.

What a great idea, Katherine, that would make my husband so HAPPY! He enjoys Italian food, but being Scottish, he has a more eclectic palate which this recipe would perfectly satisfy!
