Autumn Pumpkin Mac and Cheese
Hello friends, I’m sharing a quick recipe with you today. Start to finish it only takes about 20-30 minutes. Perfect for when you’re running a bit late with dinner, or you need to answer the “Whats for Dinner” question. You can start with a boxed creamy mac and cheese ( like kraft deluxe or something similar)or make it from scratch. You can find my macaroni and cheese recipe HERE.

What You Need
- Pre-made macaroni and cheese, from my recipe or 2 boxes of Kraft Deluxe Macaroni and Cheese
- 1 Can pumpkin puree
- 2 Cups grated cheese (sharp cheddar) separated
- 1 Packet McCormick pumpkin chili seasoning (available at Walmart and similar stores)
- 1/4 tsp. Onion powder (optional)
- 1 tsp. White pepper
- ½ tsp. Salt
- ½ tsp Chili powder
- 2 tsp. Smoked paprika
- 4 Pieces of cooked bacon
- Large saucepan
- Large spoon
Let’s Make It!
Add the pumpkin puree, seasoning mix, onion, salt, pepper, chili powder and paprika, mix well with large spoon, gradually add grated cheese until all well combined (cheese is melted). Serve with bacon on top and remaining cheese.
- Katie’s Tidbits
- Try stirring in some ham or sausage pieces instead of adding bacon to the top.
- Add 1 Tbsp maple syrup to add a bit of sweetness.
- Add jalapenos to add a little more heat.
