Crock Pot Pea Soup
I hope everyone had a lovely Thanksgiving holiday. Things here at home are very busy as I prepare our home for the holiday season. Although the weather outside is far from frightful ( yes I have been listening the Christmas carols) it is unseasonably warm . It does still qualify as chilly enough outside to make the desire for hot delicious soup an easy one to satisfy. So lets pull the crock pot (slow cooker) out from hibernation and put it to some use. I plan to use mine a lot more during the cold weather season. A perfect way to prepare dinner while you are decorating the house for the holidays too. 🙂
What You Need
2 Cups dried green peas (rinsed and drained)
2 Cups cooked ham (cubed)
1 Large white onion (chopped)
1 Cup carrots (peeled and sliced)
1 Cup potatoes (peeled and cubed)
2 tsp. garlic (dry)
1 tsp. rosemary (dry)
1/2 tsp thyme (dry)
4 Cups chicken broth
2 Cups water
4 Qt. or larger crock pot (slow cooker)
Food processor (optional)
Lets Make It!
Place all ingredients into the crock pot and stir to combine. Cover and cook on low for 8 hours (until peas are fork tender) Optional- when cooked, place half of the soup into a food processor and blend until creamy, add back to the soup in the crock pot. Stir well to combine.
Serves 4-6
Katies Tid Bits* Fork tender- soft, fork easily pokes through the peas without smashing it. I sometimes add a cup of milk the last few minutes of cooking. You can make this recipe vegetarian by omitting the ham and using vegetable stock instead of chicken broth.
