Low Sugar Zucchini Cookie Bars
It’s Meals On Monday, I decided to stop putting it in the title it’s just to looonnnnggggg! As long as we have fresh zucchini from the garden I will be sharing more zucchini recipes,like this yummy Low Sugar Zucchini Cookie Bars recipe, giggle 🙂
What You Need:
2 Cups zucchini, skin and seed removed (very finely shredded, it should look like applesauce)
4 Cups flour (sifted)
1 Cup unsalted butter (softened)
1 ¾ Cup Splenda
¼ Cup Sugar
2 Eggs (beaten)
2 tsp Ground cinnamon
1 tsp Ginger ( dry)
½ tsp Nutmeg (dry)
2 tsp Baking soda
½ tsp Baking powder
1 tsp Salt
4 Tbsp vegetable oil
1/4 Cup applesauce
½ Cup raisins ( or chocolate chips see Katie’s Tid Bit below*)
Cooking spray
Large mixing bowl
Medium mixing bowl
17 x 12 Baking sheet (bar pan)
Sifter
Grater/Shredder
Parchment paper
Before You Start Preheat oven to 350˚ and line baking sheet with parchment paper and spray with cooking spray.
Let’s Make It! Put all of the dry ingredients( except the sugar and splenda) in a large mixing bowl and combine using a fork. In a medium bowl combine shredded zucchini, sugar, splenda, applesauce,cooking oil, egg, butter and mix well using a fork (or electric mixer on low). Slowly pour into dry ingredients mixing a little at a time until well combined, add raisins. Mix well. Spread into prepared baking pan. Cook for approximately 30 minute( until lightly browned) Test for doneness with a toothpick ( toothpick comes out clean when poked ). Cool in the pan then cut into bars.
**Katie’s Tid Bits** if you prefer it sweeter. Skip the Splenda and use sugar instead. Try substituting chocolate chips for the raisins too!
Makes about 30-48 bars
I use a pizza cutter to cut my bars! Will you try this recipe with raisins or with chocolate chips, or both?
