Banana Nut Muffins
I am happy to start your week and morning off with these yummy breakfast muffins! Banana nut muffins aren’t just for breakfast though( wink). Easy to make and delicious to eat. They are a nice compliment to a cup of tea, coffee, glass of milk, morning craving, afternoon snack, midnight snack,um well you get the idea …giggle 🙂
What You Need
1 1/2 Cups ripe banana (peeled and mashed well)
1/2 Cup butter (softened)
1 Cup sugar
2 Large Eggs
1 1/2 tsp. Vanilla extract
2 Cups flour
2 tsp. Baking powder
1/4 tsp. salt (optional)
1/2 tsp. Baking soda
1/2 tsp. Ground cinnamon
3/4 Cup walnuts (chopped) divided
2 Mixing bowls
Electric mixer
Wire cooling rack
12 Count muffin tin
Paper liners
Before You Start– Preheat oven to 350°, line muffin pan with paper liners.
Lets Make It! In a mixing bowl combine sugar and butter, using your electric mixer beat on medium high speed until creamy. Add eggs, vanilla and bananas. Continue to mix until well combined and free of any large lumps. In the other mixing bowl combine flour, baking powder, salt, baking soda and cinnamon. Using a fork, stir to combine. Slowly add the dry mixture to the banana mixture a little at a time beating on medium speed to combine. Do not over mix. Beat until well blended. Fold in ½ cup of the walnuts. Fill prepared muffin cups about ¾ of the way full. Bake for 15 minutes, remove from the oven and sprinkle remaining walnuts on top of the muffins and return to oven and continue baking for 5-10 minutes or until they pass the then transfer to wire rack to cool.

on the recipe is that 1tsp of salt or is it 1/2 tsp salt ?

I’m so embarrassed, so sorry. it is actually 1/4 tsp salt and it is optional. Hugs!

Lol … I measured out 1 tsp and thought … Hmmm so I decided to add just a 1/2 tsp salt. They were still wonderful. Thank you for the wonderful recipe and the reply back. Will make thes again.

Leave out the nuts and it’s perfect. (I like nuts, just not in my baked goods.)
