Cucumber Salad

Cucumber Salad

Today’s cucumber salad recipe is simple, I mean really simple! It’s a delicious alternative to a heavy and hot meal, perfect for lunch or dinner. It takes no time at all to prepare. Although you do need to cool the cucumbers prior to making it. Because cucumber salad taste best cool and crisp.

Our garden is abundant with cucumbers. We have both burp-less and sweet success. Two very different tasting cucumbers.  I wish I could give you some. We have been giving them away to whomever will take them, :-).

What You Need

1 Lb. Cucumbers (cleaned and cut into ribbons)

1 Green onion finely minced

1 tsp. Salt

2 tsp. Sesame seeds

1/2 tsp. Red chili flakes (optional)

3 Tbsp. Extra virgin olive oil

1/4 Cup rice wine vinegar

Salad bowl

Mandolin ( or potato peeler)

 

Before You Start -Place your cucumbers in the refrigerator to cool for about 2 hours.Cut cucumbers into ribbons using your mandolin or potato peeler.

Lets Make it! Add cucumber ribbons ito your salad bowl sprinkle with all ingredients, toss well to coat. taa Daa, I told you it was easy 🙂

Serves 2-4

British Flag, union jack Congratulations to Duchess Kate and Prince William a future monarch ( heir to the throne) was born yesterday at 4:24 pm London time in the private wing of St. Mary’s Hospital.The official announcement said the baby boy weighed 8 pounds, 6 ounces, and that Prince William was present for the birth. Welcome to their new bouncing baby boy.

Well my sweet bloggy friends the heatwave continues. I know we are not alone as we suffer through this heat. Lets be honest here, watching crayons melt is fun ,but only for a moment. So many of you are enduring it as well. What are you doing to keep cool? My sweet hubby filled up a bowl with ice and water the other day and I spent an hour or so dunking a facecloth into it and wrapping it around my neck. I swear there was steam coming off of it. If you have read my about page you know I am very uncomfortable right now.. Which makes spending  time in the kitchen  feel like cooking atop a volcano. So

    I love the taste of cucumber, but it doesn’t love me. Every time I have some, I’m reminded for 3 days. That being said, this looks yummy and I wish I could eat it. I have 2 girlfriends coming for dinner on Thursday – I’m sure they would love it.

    Totally make cucumber salad here and it is one of our favorites, but I rarely ever make ribbons even though they look so pretty. Thanks for sharing your version and sounds delicious!!
