I have been influenced by so many talented chefs. But, I often feel like a “mad scientist” when I am creating new recipes. My husband told me he fell madly in love with me after I cooked our first dinner together. I served him mesquite seasoned steel head trout, sauted mushrooms, wild rice, and roasted vegetables. Thank goodness my hubby is a willing taste tester and always gives his honest opinion when I’m creating new recipes.

**Many of my recipes provide alternatives for migraine safe, dairy free, gluten free, lactose free and sugar free dietary restrictions. Often by exchanging ingredients your diet will allow. For those who have food restrictions please review all of the ingredients before creating my recipes. (smile)
Some Simple Substitutions for migraine sufferers are instead of lemon/lime zest /juice use half measurement of distilled white vinegar ( example 1 tsp. lemon juice = 1/2 tsp. distilled white vinegar)
for onion- use leeks,spring onion or green onion ( equal measurements)
omit nuts, omit dried fruits, For dairy free and sugar free recipe alterations use equal measurements of your dairy substitute or sugar substitute.
